Egg & Honey has been in business
since 2008. Amelia Contreras has been working with natural leavening or
"sourdough" starter for more than three years, and has even taught classes
on the subject at the Andersons and the 577 Foundation.
What do you mean, naturally leavened?
A true "sourdough" bread does not necessarily taste sour. It is a traditional way of leavening breads, especially in Europe. A starter
is created by cultivating a mixture of flour and water that over time
encourages the yeasts on the flour to multiply. Using a starter, along
with a long rising time, creates a deeper flavor in your bread than
packaged yeast can provide. This long rise may also improve the
nutritional benefits and digestibility of the grains. Some of the recipes
do combine starter with packaged yeast to create different textures.
In addition, many
of these breads are baked on a stone, which helps create a well-formed, crunchy
crust.
Why
Egg and Honey?
Besides being delicious, eggs and honey are two of the oldest &
simplest of human foods. They represent the goal of respecting
traditions and the past as keys to eating for the future.
Both
ingredients are also easily found being raised by our local growers, who take
care to create the most nutritious and tasty products. This means
freely romping, well-fed chickens and undiluted, unheated "raw" honey.
